Well hello there! Are you ready to read my life story? JK, ain't nobody got time for all of that, but I did want to share a bit of what inspired me to start LGK. For as long as I can remember, I've had a very up and down relationship with food. Overeating, binging, calorie counting, promising myself I would do better tomorrow, stress/emotional eating, guilt, inconsistency, all those fun things. I always had the intention of living a healthier lifestyle, but I found myself slipping up more times than I care to admit. Fast forward to 2021, the year that forever changed me and the way I view food. I struggled this year with my health more than I ever have. Dealing with one sickness after another for months on end, coupled with countless doctors and hospital visits left me wondering if the universe was really trying to end me. Until one day it hit me so hard, it was actually trying to save me. I felt like it was shaking me by the shoulders and begging me to change my life and take better care of myself. To heal my gut, lower inflammation, and take my health into my own hands. It was a huge turning point, and I'm so thankful for how it forced me to change my ways and finally brought me to a place where I valued food and understood how to use it to heal.
All of a sudden the worst year of my life turned out to be the best, and I realized that the universe really does do things FOR you. I quickly took to researching a low-tox lifestyle and learned so much about the water we drink, the everyday products we use, the stress/trauma we hold, the preservatives/chemicals in our food, the common farming practices in the U.S., and how all of these things are contributing to so many diseases. I learned how my habits were setting me up for a difficult life down the road, and I felt more determined than ever to figure out what a happy and healthy life looked like for me. Enter my love of food, photography, and desire to create recipes that don't taste like cardboard. Here you will find that eating clean and healthy is most definitely not boring or restrictive, it's about nourishing our bodies with foods that make us feel good and the way that nature intended - in it's purest form. We were given one body and one life, and when we treat it with respect and care it will come back to us tenfold. Wherever you are in your health journey, I hope this blog inspires you to make choices that will ultimately lead to your best self. Thank you for letting me be a part of it.
